Sambal chilli sauce is a hot chutney made from chillies, spices and aromatics, originally from Southeast Asia. There are many versions and varieties of making a chilli sauce in Southeast Asia, each with similar ingredients but each sauce has its own distinctive flavours. For example, the Indonesians have the sambal oelek, in Thailand there is the namprik pao, the Malaysians call it the sambal tumis and in Singapore, we call it Sambal Chilli.

HOW TO TURN PREMIX SPICE BLEND INTO A PASTE

Using a mortar and pestle or food processor, pound or blend 260g of chopped onions with 120ml water and 150g of spice blend to achieve 530g of spice paste.

Store freshly made Sambal Chilli paste frozen, thawed spice paste to be cooked within a week.

Tip: Add more onions to blend for a less spicy version.

 

A GUIDE ON HOW TO COOK SAMBAL CHILLI

260g Sambal Chilli Paste

6 tbsp cooking oil

sugar to taste

 

DIRECTIONS:

1. On medium-low heat, stir-fry spice paste with cooking oil for 15 mins.

5. Add sugar to taste.

Best served with Nasi Lemak (coconut rice) or fry some rice with it!

Allow the Sambal Chilli to be fully cooled before storing it in the refrigerator for up to a week.
